Turning Mushroom Waste into Flavor Gold

Did you know that in Europe, up to 20% of cultivated mushrooms are discarded due to size or quality issues, amounting to 62,000 tons of waste each year? At our company, we’re turning this challenge into an opportunity. We’re repurposing these by-products to create a mushroom-based powder that not only improves the taste profile in plant-based meat alternatives but also supports a more sustainable future for food. The end-product is clean-label, without any chemicals used during the process. As part of our commitment to sustainability, we also aim to utilize the wastewater generated during our production process, further reducing our environmental footprint.

Collaborating Locally for Global Impact

Our journey toward creating a sustainable flavor enhancer has been enriched by close collaboration with Mykora, Finland’s (and Nordic’s) biggest white button mushroom cultivator. Located in Kiukainen, Mykora has been instrumental in our product development, giving us firsthand access to the raw materials we need and invaluable insights into the mushroom cultivation process. This partnership with Mykora not only supports our mission to reduce waste but also strengthens local industry ties. By working together, we’re setting a powerful example of how innovation and sustainability can thrive side-by-side in Finland. 

Growth Across Europe

While we’re proud to begin operations here in Finland, the largest volumes of mushroom by-products are generated in other parts of Europe, offering an even greater opportunity to reduce waste on a larger scale. As we expand, we’re targeting key European countries, like the Netherlands, Germany, Poland and Spain, where the supply of mushroom by-products and demand from plant-based producers are strongest. By aligning our sourcing and customer base, we’re setting the foundation for a sustainable, scalable approach to transforming food waste into flavorful, in-demand ingredients.
